WHITE SPARKLING EXTRA-DRY 

LOCATION OF VINEYARD:
municipality of Sozzigalli di Soliera in the plain around Modena, in the riverbed of the Secchia river.
GEOLOGICAL ZONE:
of average composition tending towards muddy due to alluvional sediment.
DENSITY OF VINEYARD:
2,500 vines per hectare.
PRODUCTION:
6,500 bottles.
VINE PLANT:
Grechetto Gentile 100% Single-vineyard.
WINE MAKING:
the grapes are softly pressed without being de-stammed and only the very first juice is used in order to obtain the finest color and bouquet. The most is then cleaned and fermented at low temperature. Then you get the basic wine.
REFINING:
in stainless steel pressure vats along the Martinotti Method at low temperature for over 9 months.
AGING POTENTIAL:
2 years, depending on the vintage.
COLOUR:
brilliant pale yellow with a very fine and persistent perlage.
BOUQUET:
white flowers and fruits.
FLAVOUR:
mild, persistent and enchanting.
PAIRINGS:
seafood, fish dishes, white meats.
SERVING TEMPERATURE:
6-8° Celsius.
