BRUT SPARKLING ROSÈ

LOCATION OF VINEYARD:
municipality of Sozzigalli di Soliera in the plain around Modena, in the riverbed of the Secchia river.
GEOLOGICAL ZONE:
alluvial soil, in the riverbed of the Secchia river.
DENSITY OF VINEYARD:
2,500 vines per hectare.
PRODUCTION:
2,500 bottles.
VINE PLANT:
Lambrusco di Sorbara, 100% single-vineyard.
WINE MAKING:
the grapes are softly pressed without being de-stammed and only the very first juice is used in order to obtain the finest color and bouquet. The most is then cleaned and fermented at low temperature. Then you get the basic wine.
REFINING:
bottle fermentation on the lees along the Ancestrale Method at low temperature for over 12 months. Partial degorgement along the Ala volèe method, therefore the wines may appear slightly cloudy.
AGING POTENTIAL:
2 years, depending on the vintage.
COLOUR:
light bright rosè, with a very fine and persistent perlage.
BOUQUET:
white fruits and crusty bread.
FLAVOUR:
dry, persistent and enchanting.
PAIRINGS:
boiled meat, white meat, fish and traditional cold cuts from Modena.
SERVING TEMPERATURE:
6-8° Celsius.
