Made from wine must which is cooked and then aged for years in classic casks made from different types of woods. With a rich and glossy dark brown color, it possesses a characteristically syrupy density. Its penetrating acidic aroma is pleasant and balanced. Ideal as a condiment for meats, risotto, raw and cooked vegetables, fish and strawberries. Two types are produced:
Extra Vecchio - aged for more than 25 years.
Affinato - aged for more than 12 years.
