VINE PLANT:
Lambrusco Grasparossa di Castelvetro.
WINE MAKING:
In steel with 7-8 days of cold macerating with the skins.
REFINING:
2 months in the bottle.
AGING POTENTIAL:
3 years, according to vintage.
COLOUR:
Ruby red, intense, tending towards garnet.
BOUQUET:
Distinctly vinous and particularly fragrant.
FLAVOUR:
Dry, sapid, full-bodied and slightly tannic.
PAIRINGS:
Cured meats, first courses, tagliatelle with meat sauce, lasagne, red meats and sour cherry tart.
SERVING TEMPERATURE:
12-14° celsius.
