Of average composition, tending towards muddy due to alluvial lime sediment.

VINE PLANT:
Lambrusco di Sorbara.
WINE MAKING:
In steel with 2-3 days of cold macerating with the skins.
REFINING:
1 month in the bottle.
AGING POTENTIAL:
2 years, according to vintage.
COLOUR:
Ruby red.
BOUQUET:
Characteristic, reminiscent of violets.
FLAVOUR:
Dry, sapid, refreshing.
PAIRINGS:
Hors-d’oeuvres in general, cured meats, tortellini in broth, roasts and boiled meats.
SERVING TEMPERATURE:
12-14° celsius.
