LOCATION OF VINEYARD:
The hills of Formigine, 90 meters above sea level.
GEOLOGICAL ZONE:
Rolling foothills with limestone and clay soil.
DENSITY OF VINEYARD:
3,500 vines per hectare.
PRODUCTION:
90 -100 quintals per hectare.
VINE PLANT:
Lambrusco Grasparossa - Single-Vineyard
WINE MAKING:
The grapes are softly pressed without being de-stammed and only the very first juice is used in order to obtain the finest color and bouquet
REFINING:
In stainless steel pressure vats, called Autoclave , along the Martinotti Method at low temperature for over 9 months
AGING POTENTIAL:
2 years , depending on the vintage
COLOUR:
Bright Rosé with a subtle and persistent perlage.
BOUQUET:
An intense nose that is characterized by balanced notes of red fruit and cherry.
FLAVOUR:
Dry, persistent and all-encompassing taste.
PAIRINGS:
Cold cuts, first courses with meat sauce, white meats and small fish (anchovies, sardines, herring and mackerel.)
SERVING TEMPERATURE:
6-8°.
